How to Store, Freeze and Transport Cakes
A cake tastes best when it is stored properly.
Room temperature
Unfrosted sponges keep for a day or two in an airtight tin. Cakes with buttercream usually keep at cool room temperature for a short time, but cakes with cream cheese or fresh cream should go into the fridge.
Freezing
Wrap cooled layers tightly in cling film and then foil. Freeze for up to a few weeks. Thaw in the wrapping at room temperature so condensation does not make the surface sticky.
Transport
Chill the cake before travel so the frosting is firm. Use a box with a non-slip mat, and drive carefully.
